Pina Colada Ice Pops

Preparation time: 10 minutes + freezing time


Fresh Pineapple -1 , cut into small pieces

Water-1/4 cup

Sugar-1/4 cup

Chopped mint leaves- 2 Tsp( Optional)

Full fat coconut milk -1 small can ((try Real Thai coconut milk available at gourmet stores)


Put the Fresh pineapple pieces, water, sugar and chopped mint leaves in a blender and blend until it is completely smooth.

In another bowl stir together  sugar and coconut milk.

Mix all the ingredients together, making sure that the coconut cream is completely dissolved. Pass the ingredients through a sieve if necessary.( or you can pour the coconut milk as different layers in between).Then pour this into moulds and freeze overnight. Unmould carefully.
