Ela Ada

Fine rice flour – 2 cups
Water – To prepare dough
Salt – To taste
Coconut scrapings – ½ coconut
Cardamom powder – ½ tsp
Sugar/Jaggery (melted with a little water and strained) –

Boil water with salt. Pour the boiling water into flour, mix well and make a smooth dough. Mix the coconut scrapings, jaggery syrup/ sugar and cardamom powder. Divide the dough into equal portions. Take a banana leaf, clean it and smear a few drops of water. Spread a rice ball on the leaf into a thick circle.
Place a tablespoon full of filling in the centre. Fold the leaf over and press the edge of the dough well. Repeat the same procedure for the remaining dough balls. Steam these in a steamer/Idli cooker till done.
